How To: Making Orange Cupcake Icing & Glaze
Terribly sorry I haven't posted since Easter! I had lots of school work to finish and now it's finally summer again so here we go with a post on how to make Orange Cake/Cupcake Icing, which I made for my dad on Father's Day this year and they were amazing. So here we go!
You Will Need:
A Box Cake Mix
Cupcake Liners and Tins
Icing Recipe 1:
1/4 cup of softened Butter
2 cups of Confectioner's Sugar
1 tsp. grated orange peel
3/4 tsp. of Vanilla Extract
2 to 3 tablespoons orange juice
Glaze Recipe 2:
Orange Juice
Confectioner's Sugar
I just used a box cake mix(I know, so boring) but it was Duncan Hines 'Supreme Orange Cake Mix"
you will need one of these boxed cake mixes
Cupcake Liners
After you bake them, let them cool out of their pans (so they don't cause the papers to get humid and rip) and place them on a cooling rack.
Now for the Icing:
I found this recipe for icing online when looking for a creamy icing to use as one was pictured on the front of the cake mix box, but wasn't listed in the recipes on the back. So I went in search on the interwebs for a new icing to try with the cupcakes. What I did was a group of cupcakes that were iced with the creamy frosting, while the other half of the cupcakes were glazed.
The Ingredients you need for the icing are:
1/4 cup of softened Butter
2 cups of Confectioner's Sugar
1 tsp. grated orange peel
3/4 tsp. of Vanilla Extract
2 to 3 tablespoons orange juice
And I'm sorry, but I forgot to take pictures of them all, so shame on me for that one. Yet it is a relatively simple recipe.
Directions:
Use a small bowl to cream your butter until it qualifies as light and fluffy. Next put in your confectioner's sugar, your orange peel, and your vanilla. Add enough orange juice to consistency. I personally only used 2 T. of the Orange juice because three would have made the mixture too liquidy, so I prevented that by not using as much orange juice. So moral of the story, don't be afraid to put less or more orange juice due to what you want the icing's consistency to be.
For the Glaze:
Ingredients:
Orange Juice
Confectioner's Sugar
Directions:
Mix the orange juice and confectioner's sugar in a small metal bowl, and sweeten the juice to taste. When it is mixed, together, poke holes into your cupcakes with a round tooth pick, drizzle the glaze over them and BAM. Cupcakes.

I hope you have as much success with this recipe as I did, and if you do try it send me pictures or post them in the comments below! I would love to see what you guys can create!
Until next time,
